Giant freshwater stingray, (Potamotrygon brachyura or short tailed river stingray), caught by Anthony Giardenelli near the village of Oran on the Amazon River

This Incredible specimen of giant freshwater stingray was caught near Oran, Peru Lower Amazon River region. She weighed in at 154lb over 4ft long including her short tail. We were fishing on the point of two rivers combining when she sucked the live bait directly into her mouth. She managed to swim a distance until it became like a rock at the bottom of the river. We had to untie and follow her downstream. When a stingray is hooked, they bury themselves in the sediment practically suctioned to the bottom. They are very stubborn, and at this point, if you do not have the right gear, it’s really easy to lose.

After about 30 agonizing minutes, we had a crowd of other local fisherman in awe at the braided nylon fishing line that is almost as fine as thread. Some of them were very impressed and stayed until we had beached the ray. We decided to take it to Oran Village to weigh and distribute to villagers and fisherman who followed us. It took 2 men to pull this ray up on the front of my speedboat and had to be tied down in several parts due to its slipperiness.

Freshwater stingrays of the Amazon river Basin are unique from others due to their natural history of isolation through geological change (uplift of Andes Mountains approx 60 million years ago). All species of Amazonian rays have genetic roots with ray species found in the pacific ocean and none in the Atlantic furthermore solidifying the case that the Amazon flowed westward before the end of the Cretaceous period. There are over 20 species of rays here in the Amazon as well as many species of fish, mollusks and other invertebrates that evolved from marine dwelling organisms.

Demi Lovato says she’s ready to go back to work and is thanking fans for lifting her up during what she calls “probably the darkest time in my life.”

The 18-year-old Disney TV star entered a treatment facility last November to deal with “emotional and physical issues.” The “Sonny With a Chance” star had to drop out of a tour with the Jonas Brothers and it was revealed that she had fought with a backup dancer.

In a cheery video released on Cambio.com on Monday, Lovato told fans she’s back home.

Lovato says she was dealing with issues that teen girls face, but didn’t say what they were. In the past, she has acknowledged cutting herself.

Lovato told fans they brought light in her life during her darkest hours and without them “I probably wouldn’t be here today.”

In 2010 the Karikuy volunteers and myself made it a habit of trying to find the tastiest food in Lima, Peru and around the country. We would check out recommendations by taxi drivers, chefs and people from all walks of life to find the gems of South America’s culinary capital and beyond. The following list is made up of our favorite places to eat, these are the restaurants we constantly came back to, as well as some that we found during our travels around the country.

Ceviche at Papos

PAPOS
This hidden gem is a cevicheria only known to the local population, it was introduced to me by family members and you won’t find it any of the guide books. They have the best Ceviche in Lima (in our opinion) and their restaurant, located in a quiet neighborhood, is always packed for lunch. On the weekends it can even be hard to find a seat in any of it’s 5 floors of dining space, truly incredible. So incredible in fact that we are keeping this one a secret for locals only. To visit Papos you’ll either have to take part in the Karikuy Volunteer Program or book a City Tour of Lima with Karikuy, either way you will not be disappointed. Some of our favorite dishes include the Ceviche Mixto and the Tacu Tacu that is served only on weekends and holidays.

OCEANIKA
If you are a sushi and seafood lover then this place is for you. For about you can have all you can eat sushi rolls. The restaurant itself is large and airy and reminds you of a cafeteria but the food quickly sets it apart from any other dining experience. Remember to order the “barra libre” and your waiter will be quick to point out which part of the menu you can order rolls from as there are many types to choose from. On January 11th, the Karikuy Organization rolled out its 3rd annual win a free trip to Machu Picchu contest. While every year since its inception we have brought you a different type of contest, we decided that this year we would give the artists; the creative minds out there the opportunity to participate and win the contest. For that reason this years contest is a t-shirt design competition. We are basically looking for the most creative and cool looking t-shirt a mind can create.

The winner of the contest will not only receive a four day trip to Machu Picchu courtesy of Karikuy Tours, but his winning design will also be created into a t-shirt that our 2011 volunteers will receive and be able to wear during their time travelling in Peru. All submissions for the contest must be sent to us before February 25th, 2011. The submission deadline will be followed by a three week voting period to highlight the best designs. Beginning on Monday, February 28th all submissions will be uploaded to contest page for voting to occur. In all there will be 4 finalists, 3 chosen by number of votes and one by special consideration (voted on by our past and present volunteers). From those final four t-shirt design a final vote will take place by our 2011 volunteers. Any draws will be settled by votes coming from our previous years contest winners. The winner will be announced on Saturday, March 19th.

The winner will win a 4 day trip to Machu Picchu which includes, hotel transfers, 3 nights hostel, Sacred Valley tour and tourist ticket with backpacker train connections to Aguas Calientes, a Sunrise Tour of Machu Picchu with all admissions and return backpacker train to Cusco. What a great prize to win on Machu Picchu’s centennial of all years! The winner will be free to pick any date to begin his free trip. One of our specials is Choclo con Queso, a dish not many Americans are familiar with. It is Peruvian corn on the cob, made with authentic giant Andean corn, paired with fresh cheese, or “queso.” The authentic “choclo,” or giant corn, is what makes this dish a traditional Peruvian treat. Just like Papa a la Huancaina, it is great as an appetizer or as a side with your meal. It’s not always available, but we list it in our daily specials on Twitter when we have it.
